These oat cookies are a staple in our house. Not only do we love them, but our little boy Phoenix loves them too. They are perfect for little ones as they have no refined sugar. The oats allow for a slow release of energy, the cinnamon balances the blood sugar level and the bananas which are a great source of fibre and other nutrients too.
100 grams of gluten free oats
30 grams of raisins
30 grams of ground almonds
30 grams of sugar free desiccated coconut
2 large ripe mashed bananas
1/2 tsp of vanilla essence
1/4 tsp of cinnamon
5 TBSPs of coconut oil
Heat your oven up to 180 degrees Celsius. Chop up the raisins and add to the bowl alongside the oats, desiccated coconut, ground almonds and cinnamon. In a separate bowl mash the bananas and add the melted coconut oil and vanilla essence. Mix together. Add the banana mixture to the dry ingredients and combine. Grease a baking tray with a little bit of coconut oil and spoon the mixture onto the tray. Flatten with a spoon to make little cookies. Bake in the oven for 15 minutes until the cookies start to crisp around the edge. Leave them to cool a little before serving!
